Origin is a brunch restaurant and craft coffee shop located a short walk away from downtown Aspen at the Gant. We were recently voted by our community as The Best Coffee & Breakfast in the Aspen Times. We prioritize sourcing local and organic ingredients from Western Colorado and the surrounding region in our from scratch kitchen; always cooking with intention and flavor.
In the summer season, over 60% of our food by volume is sourced from the area and an impressive 40% even in the winter season from our fresh milled flour to our potatoes, beef, and truly pasture raised eggs.
Inspired by Japanese and South American flavors, we add our own Colorado twist to every dish. We believe food should be both delicious and nourishing, leaving you feeling as good as it tastes.
That’s why we proudly avoid cooking with soils, cooking with avocado oil and using rice bran oil for our fryer. We take pride in sourcing high-quality ingredients that align with our commitment to flavor and well-being.
